How do I get validated by phone with an EV SSL?

With an EV certificate, a telephone validation is part of the validation.
After applying for the EV certificate you should have received an email requesting you to provide documents. Furthermore a domain validation will take place. When these documents are received and the domain validation is also done, a validation by phone can take place.
You will receive an email so you can schedule a date and time.
